Big Dry 700ml
Big, dry and peppery but not too spicy. Big Dry has notes of rosemary and thyme but what sets this gin apart is the jalapeno we use to give it that extra kick. The intense and robust flavours complement the dry taste of the juniper berries.
On the Palate: Juniper, pine, pimento, mace. Oil content creates good mouth feel, warm at the back of the palate from the jalapeno.
This style lends itself to a martini or in a G&T with a slice of jalapeno and some fresh coffee beans.

Ambleside No 8 Botanical Gin 700ml
No. 8 showcases the zesty citrus flavour of South Australia’s very own organic Riverland oranges. This botanical gin is soft and smooth on the palate. The citrus notes are complemented by the distinct flavour of star anise and coriander seed.
On the Palate: Orange, fresh lemon, floral and peppery. The citrus extends through the mid palate.
Enjoy with a quality, floral tonic water and a slice or two of dehydrated orange.

Small Acre, big flavour! 12 botanicals, some from our own distillery garden, make up this punchy gin. Rhubarb, bay leaf, apple and cloves give a savoury zing on the palate.
On the Palate: Juniper, pine, notes of white pepper, herbaceous and earthy body, slight bite to finish
This style pairs well with just about anything green, fresh and leafy. Our suggestion; some fresh basil and a quality floral tonic water. Great for cocktail making and mixing.

Bird in Hand Sparkling Pinot 2021
A light and delicate Sparkling, salmon pink in colour with floral notes and hints of strawberry and cherry on the nose. Its lively palate evokes flavours of fresh strawberry with a delicate bead, leading to a crisp, clean finish.
Crushed and destemmed straight to press with minimal time on skins ensured the extraction of only the lightest of colour. Individual batches from each vineyard were kept separate right up until blending, to guarantee the winemakers could select the best fruit based on flavour, complexity and cohesiveness.
The perfect pre-dinner aperitif or celebratory drink.

Bird in Hand Sauvignon Blanc 2021
Predominantly fruit was sourced from within the high altitude cool pockets of the central Onkaparinga Valley, including Lenswood, Balhannah, Oakbank, Woodside and Charleston to produce a premium quality, classic Adelaide Hills sauvignon blanc.
The fruit was gently crushed, destemmed and immediately chilled before being pressed to tank where only the purest free run juice underwent a cool fermentation over approximately 14 days. A short maturation on lees was followed by an early bottling to enhance freshness.
Our Sauvignon Blanc shows lifted, fresh and punchy flavours and aromas, underpinned with classic varietal notes of passionfruit, fresh green apple, grapefruit and faint snow pea. Fresh and delicate, with a textured mid-palate that finishes dry, with lively citrus acidity and light chalkiness. Slightly textured on the mid-palate, it has a dry finish, with subtle citrus acidity.
Best enjoyed young as an aperitif or paired with seafood such as oily grilled fish or chargrilled squid.

Clean, crisp and fresh. A classic cool-climate Pinot Gris displaying lifted guava, honeysuckle and crunchy Nashi pear with a waxy texture and lively citrus finish.

Colour: Medium to light red.
Aroma: Bright strawberry, red cherry and raspberry fruits with just a hints of damp undergrowth and forest floor there in the mix too. Typical Pinot.
Palate: Although light in body, the palate has lovely depth of the red fruits mentioned above, fine tannins and balanced acidity. Lush & plush finish.

Unfinished Business is a light-bodied, cool climate Pinot Noir with pure and vibrant fruit characters. Aromatic on the nose with bright fruits of strawberry and cherries, a good acid structure, subtle savoury notes and fine tannins provide a smooth finish.

Vibrant red berry fruits burst onto the palate with spicy plums.
Fine savoury tannins linger on the palate.
Cellaring: This wine is made for immediate consumption, however, will reward cellaring for 3-5 years.

Colour: Deep purple with a ruby rim.
Aroma: Classic cabernet nose; blackcurrant and blackberry with hints of cedar and roasted coffee beans.
Palate: Earthy and savoury on the palate, with a touch spice and dark fruit, wrapped in an elegant whirl of French oak. A smooth lingering finish, with grippy tannins, makes for easy drinking.
Food Match: BBQ beef short-ribs with homemade slaw.
