Vibrant and elegant, The Black Sparkling Shiraz NV strikes a good balance between extracting appropriate tannin for structure, while retaining natural fruit drive and aromatics. The result is a bright, full-bodied Sparkling Shiraz.
The Adelaide Hills is renowned for Australia’s finest sauvignon blanc. Harvesting in the cool of the night retains freshness and flavour.
Fruit was sourced from within cooler pockets of the Onkaparinga Valley in the Adelaide Hills, to produce a premium quality sauvignon blanc.
Fruit was gently crushed and destemmed and immediately chilled to keep cold before being pressed to tank where fermentation occurred for approximately 14 days. A short maturation on lees is followed by an early bottling to enhance freshness.
This Sauvignon Blanc shows lifted, fresh and punchy flavours and aromas, underpinned with varietal notes of passion fruit, pineapple and grapefruit. Slightly textured on the mid-palate, it has a dry finish, with subtle citrus acidity.
Best enjoyed young as an aperitif or paired with seafood such as oily grilled fish or chargrilled squid.
The 2017 vintage of Bird in Hand Sauvignon Blanc was chosen as the ‘Sauvignon Blanc of the Year’ at the annual Winestate awards, the first Australian winery to ever win this accolade.
Colour: Pale straw with green and lemon hues
Aroma: Fragrant and lifted aromatics of citrus fruits with some floral hints and riper melon
Palate: Fresh, crisp and clean palate with citrus flavours all nicely integrated with richer tropical fruits and spice before a persistent and vibrant finish.
Food Match: Creamy spaghetti carbonara

The palate is medium bodied possessing stone fruit mentioned above and some mineral/stony textures that gently wash over the mid palate providing length and interest. Balanced acidity ensures the wine does not finish fat or heavy.
Summary: The Adelaide Hills region has proven to be well suited to growing Pinot Gris successfully. This is the 12th release of the Pike & Joyce version and we think one of the best. It is still one of the best white wines to pair up with spicy Asian food.

Pike & Joyce 'Rapide' Pinot Noir 2018
Colour: Medium to light red.
Aroma: Bright strawberry, red cherry and raspberry fruits with just a hints of damp undergrowth and forest floor there in the mix too. Typical Pinot.
Palate: Although light in body, the palate has lovely depth of the red fruits mentioned above, fine tannins and balanced acidity. Lush & plush finish.
Unfinished Business is a light-bodied, cool climate Pinot Noir with pure and vibrant fruit characters. Aromatic on the nose with bright fruits of strawberry and cherries, a good acid structure, subtle savoury notes and fine tannins provide a smooth finish.
Colour : Dark purple with red hues
Aromatics : Lifted nose with floral notes, cassis and dark berry fruit with a hint of chocolate.
Palate : .A vibrant Cabernet with lovely cassis/blackcurrant fruit, a hint of crushed leaf character with dark chocolate notes on the finish.
Cellaring : Will reward cellaring for 5 years or more.
Colour: Deep purple with a ruby rim.
Aroma: Classic cabernet nose; blackcurrant and blackberry with hints of cedar and roasted coffee beans.
Palate: Earthy and savoury on the palate, with a touch spice and dark fruit, wrapped in an elegant whirl of French oak. A smooth lingering finish, with grippy tannins, makes for easy drinking.
Food Match: BBQ beef short-ribs with homemade slaw.
Cellaring: 5 to 8 years.
Colour: Deep rich ruby with purple hues Aroma: Deep dark fruits and dark chocolate. Vibrant red cherry with hints of cedar. Palate: Well structure palate with bright berry notes of strawberry, raspberry and cherry. Hints of tobacco and coffee and some smooth vanilla notes from time in oak. Juicy and elegant. Food Match: Roast lamb of course Cellaring: 3 – 5 years.
